It’s summertime and that means its hot! Too hot for soup! Or maybe not, summer is the perfect time of the year to enjoy cold soup.

While most people tend to think of cold soup only in terms of gazpacho or borscht, summers soups are made from seasonal fruits or vegetables, according to the fearless dining blog. These soups can be prepared ahead and served any time of the day. Here are five fruit soup recipes from around the globe.

Watermelon Soup

What can be more refreshing on a hot summers day than a chilled watermelon soup that is made with mint. This recipe from the allrecipes blog calls for watermelon, lemon juice, honey, and fresh mint. There is absolutely no cooking involved.  Just blend until smooth, chill for at least two hours and serve.

Swedish Blueberry Soup

This cold blueberry soup is a delicious and healthy breakfast dish in Sweden. It can be served cold in the summer and warm in the cold weather months. This recipe from the domestic dietician blog calls for frozen wild blueberries, lemon juice, cinnamon, nutmeg, sugar, maple syrup, and corn starch for thickening. The blueberries must be cooked for 15 minutes and then chill the soup. Garnish with Greek yogurt and almonds or granola.

Hong Kong Mango Sago Soup

This cold soup from Hong Kong is usually served as a dessert, according to Greatest. While mangos are in season now, finding a pomelo is trickier but you can substitute with a grapefruit. You will also need sago, sugar, coconut milk, and evaporated milk for this recipe. There is some stove- time involved in this recipe as you have to cook the sago and melt the sugar but the flavor of the soup makes the heat worthwhile.

Hungarian Fruit Soup

Gyümölcsleves, or Hungarian fruit soup made with tart cherries, tart apples, and berries is a delicacy in Hungary. This recipe from Food & Wine can actually use any fruit that is in season. You will also need cornstarch, sugar, a cinnamon stick, and a slice of lemon. This recipe has to be cooked on your stove but its tangy delicious taste is worth the heat.

Chilled Cantaloupe Soup

Melons are in season now so it’s the best time to make chilled cantaloupe soup. This recipe from allrecipes is super simple. All you need is one melon that has been peeled, seeded and cut up into cubes, orange juice, lime juice, and cinnamon. Put the mixture in a blender and blend until smooth. Refrigerate for at least an hour, garnish with fresh mint if desired, and serve.
