Avocados are nature’s gift. Besides being versatile and delicious, avocados are nutritionally-dense and have a host of health benefits. That’s because the superfruit – some people think it is a vegetable – is an excellent source of healthy monounsaturated fat, vitamin E, potassium, and fiber, reported BBC Good Food.
Avocados grow in warm climates and come in a large variety of sizes, colors and textures but all are delicious. While traditionally used in Latin American dishes, avocados can be used in a variety of meals from morning toasts to salad dinners. Here are five easy to make recipes:
Mashed Avocado on Toast
This mashed avocado toast recipe from Olive Magazine is super easy to prepare and makes a healthy breakfast or lunch. All you need are six ingredients: avocado, plumb tomatoes, whole grain or sourdough bread, lemon juice, cayenne pepper, and a handful of baby leaves. Grill the tomatoes for around 20 minutes, while you are mashing the avocado.
Avocado Caprese Salad
Do you love a caprese salad? Here’s a recipe from Eating Well that has the classic ingredients of the classic caprese with the addition of avocado. Topped with a tangy balsamic dressing, it is a delicious side salad or meal. All you need are two ripe avocados, cherry tomatoes, fresh mozzarella balls, balsamic vinegar, olive oil, basil leaves, and add salt and pepper to taste. The best part of all is this salad only takes five minutes to prepare.
Simple and Easy Guacamole
No avocado recipe article would be complete without a classic guacamole. This fool-proof and simple recipe from the Cookies + Kate blog uses just six ingredients: avocado, onion, cilantro, jalapeño peppers, and lime. You can add tomatoes if in season and fully ripe. Just mash the avocado with a potato masher or fork, dice the onion and optional tomato and mix all the ingredients together. Guacamole can be served with traditional Mexican recipes or with just about anything.
Salmon Avocado Rice Bowls
One bowl meals are trending on social media and this delicious avocado and salmon rice bowl will make a delicious and healthy meal as well as a beautiful photo on Instagram. This recipe from Olive magazine is easy to make and you can use whatever veggies you have in the fridge in addition to whole grain basmati rice, smoked salmon or sushi-grade raw salmon, avocado, cucumber, edamame, and one nori sheet. Top with a dressing made from miso, rice vinegar, tamari, and honey.
Avocado Salsa
This salsa from The Pioneer Woman blog is not like the usual smooth and creamy texture that most people associate with avocado dips. This chunky salsa is full of texture from the chunks of avocado, tomatoes, jicama (or radish), red onions, and poblano peppers. The juice of two limes will keep the avocado from turning black. Serve with tortilla chips at your next barbeque or party.
